Attitude
“The longer I live, the more I realize the impact of attitude on life. Attitude, to me, is more important than facts. It is more important than the past, the education, the money, than circumstances, than failure, than successes, than what other people think or say or do. It is more important than appearance, giftedness or skill. It will make or break a company... a church... a home. The remarkable thing is we have a choice everyday regarding the attitude we will embrace for that day. We cannot change our past... we cannot change the fact that people will act in a certain way. We cannot change the inevitable. The only thing we can do is play on the one string we have, and that is our attitude. I am convinced that life is 10% what happens to me and 90% of how I react to it. And so it is with you... we are in charge of our Attitudes.”

Cat Sitting!
We are watching the cats this weekend as one of my friends heads to Milwaukee to visit family and friends.
I still do not remember what the other thing was that I wanted to comment on from yesterday, but it will come back to me at some random point I am sure.
Oh and we have horrible fruit flies, so if anyone has a solution that does not involve using my red wine (trick from the Internet I hear), that would be lovely.

2 things
I wanted to comment on two things:
1. My bus stop reeks. It's the sewage smell coming up through the gutters. My nose is completely clogged due to a sinus cold and I can still smell it even though I can barely breathe.
2. I forgot what the second thing was, but when I remember, I will post it.

Fall 2009
School started last Tuesday, or a couple of Tuesdays ago for that matter, and it's been interesting getting used to a schedule again. I'm taking four classes: Social Statistics, Introduction to Criminology and Social Control, a seminar on genocide and global conflict, and Social Theory.

One of the reasons why people get so sentimental...
Because memories are the only thing that don't change... when everything else does.
Found this on my friend, Helen's FB page and thought it was very true.

Pad Thai!
Just made this one and it was a hit!
http://www.thaitable.com/Thai/recipes/Pad_Thai.htm
I added a lot more of the red pepper and made the noodles extra 'mushy' instead, rather than light and crisp. I also forgot the shallots and chives, but added in snow peas and put in a little extra garlic.
Overall wonderful recipe!

alive, and go do that, because what the world needs is people who have come

Great Recipe!!
Recipe: Texas Caviar
We had a girls' night last night and one of my friends made this amazing dip! Couldn't get enough!
Jodie’s Texas Caviar:
Sauce:
1 tsp. salt
1/2 tsp pepper
3/4 cup vinegar (red wine vinegar works wonderfully!)
1 cup sugar
1/4 cup canola oil
Boil together above ingredients until sugar is dissolved. Set aside.
Dip:
Combine the following:
1 can pinto beans, rinsed and drained
1 can whole white corn, rinsed and drained
1 can black-eyed peas, rinsed and drained
1 cup diced green pepper
1 cup celery chopped
1 small onion chopped
1-3 tablespoons jalapeno pepper chopped
1 small jar pimento
Pour sauce over other ingredients. Refrigerate overnight. Drain to serve. Serve with tortilla chips.
