Pad Thai!
Just made this one and it was a hit!

I added a lot more of the red pepper and made the noodles extra 'mushy' instead, rather than light and crisp. I also forgot the shallots and chives, but added in snow peas and put in a little extra garlic.
Overall wonderful recipe!

Great Recipe!!
Recipe: Texas Caviar
We had a girls' night last night and one of my friends made this amazing dip! Couldn't get enough!
Jodie’s Texas Caviar:
Sauce:
1 tsp. salt
1/2 tsp pepper
3/4 cup vinegar (red wine vinegar works wonderfully!)
1 cup sugar
1/4 cup canola oil
Boil together above ingredients until sugar is dissolved. Set aside.
Dip:
Combine the following:
1 can pinto beans, rinsed and drained
1 can whole white corn, rinsed and drained
1 can black-eyed peas, rinsed and drained
1 cup diced green pepper
1 cup celery chopped
1 small onion chopped
1-3 tablespoons jalapeno pepper chopped
1 small jar pimento
Pour sauce over other ingredients. Refrigerate overnight. Drain to serve. Serve with tortilla chips.

Happy Christmas!!
Happy (belated) Christmas!!
Currently, I'm in the middle, or near the beginning, of reading Gone with the Wind. I remember telling C that I was going to "plow" through the book over Christmas break - a goal that I believe is quite possible. I'm also going to need to get my mind rolling into French gears and read some romans (french novels) for my class in the spring, but that isn't until Jan 20th sometime.
Hope everyone is having a wonderful holiday break!
